In a large skillet, heat 1 tbsp of olive oil over medium heat. Add the sausages and cook until browned on all sides, about 7-8 minutes. Remove and set aside.
In the same skillet, add the remaining olive oil. Sauté sliced peppers, onions, and minced garlic until softened.
Stir in oregano, basil, red pepper flakes, salt, and pepper. Cook for an additional 2-3 minutes.
Return the sausages to the skillet, add chicken broth, and cover. Simmer for 10 minutes until the sausages are cooked through and the flavors meld together.
Garnish with fresh parsley and serve as is or in hoagie rolls or Italian bread.
Notes:
Add a splash of balsamic vinegar for extra depth of flavor.
Serve with a side of roasted potatoes or a fresh salad.
