Chicken and Green Onion Fritters

  1. Prepare the Mixture:
    • In a large bowl, combine the diced or ground chicken, finely chopped green onions, sour cream, eggs, parsley, mozzarella cheese, flour, salt, pepper, garlic powder, and paprika. Mix until all ingredients are well combined.
  2. Heat the Oil:
    • In a large skillet, heat about 2-3 tablespoons of oil over medium heat. Ensure the oil is hot but not smoking.
  3. Form the Fritters:
    • Using your hands or a spoon, scoop about 2 tablespoons of the chicken mixture and shape it into a patty. Repeat until all the mixture is used.
  4. Fry the Fritters:
    • Carefully place the patties in the hot oil, making sure not to overcrowd the pan. Fry for about 4-5 minutes on each side, or until golden brown and cooked through. Adjust the heat as necessary to prevent burning.
  5. Drain and Serve:
    • Once cooked, transfer the fritters to a plate lined with paper towels to drain excess oil.
  6. Enjoy:
    • Serve warm with your favorite dipping sauce or a side salad for a complete meal. These fritters are great as appetizers or a main dish!

Tips

  • Customization: Feel free to add other vegetables like bell peppers or grated zucchini to the mixture for extra flavor and nutrition.
  • Baking Option: For a healthier version, you can bake the fritters in a preheated oven at 400°F (200°C) on a greased baking sheet for about 20 minutes, flipping halfway through.
  • Storage: Leftover fritters can be stored in the refrigerator for up to 3 days and reheated in the oven or skillet.

Enjoy your flavorful chicken and green onion fritters!
