Don’t Let Good Veggies Go to Waste! Your Guide to June’s Harvest

In June, several vegetables really hit their stride and can often produce in abundance, leaving you with more than you know what to do with!

Here are some common June bounties and ideas for what to do with the excess:

Common June Excess Veggies :

  1. Zucchini / Courgettes: This is arguably the most notorious for overproduction. Once they start, they just keep coming!
  2. Cucumbers: Similar to zucchini, cucumbers can produce prolifically.
  3. Green Beans: Often come in large flushes.
  4. Swiss Chard / Spinach (and other leafy greens that bolt later): While spring is peak, some varieties might still be strong in early June before the heat gets too intense, or they might be going to seed (bolting).
  5. Lettuce (if not too hot yet): Early June can still yield good lettuce before it bolts in heat.
  6. Bell Peppers / Sweet Peppers: Starting to produce heavily in June, especially in warmer areas.
  7. Eggplant / Aubergine: Often starting its peak production in June.
  8. Tomatoes (early varieties): While peak tomato season is usually July/August, early varieties might start yielding in late June.
